The other day I was reading one of my favourite blogs, Michaela Forni, and saw this recipe; Zucchini fritters! I don’t know why or what caught my eye but I knew I had to make it immediately. After work I popped by my local Tescos and got all the ingredients and started cooking. As usual I added a little bit of everything instead of following the recipe, but it turned out great! I rarely cook vegeterian or vegan meals but it is definitely something I want to do more. Prep: 15 min

Servings: 3-4 people (2 fritters each)
- A large zucchini
- A large carrot
- Garlic, lots of it
- 2 eggs
- 1 dl breadcrumbs
- seasoning (salt and other things you fancy)
- 1 dl parmesan
Start by grating the zucchini and carrot and mix together with salt and let sit for 5 minutes. maybe make your salad whilst your wait? that’s what I did. squeeze as much water as you can out of the zucchini and carrot mixture and add eggs, parmesan, flour and garlic. fry the fritters in olive oil for a couple of minutes on each side and voila!
Eat with a side salad, cous cous (or rice, bulgur..) and garlic sauce. I made mine with sour creme, about 3 garlic cloves (lol) and random herbal seasoning.
