It’s been a while since my last recipe, hasn’t it?!
Yesterday I made this wonderful half-warm salad and it was surprisingly yummy. Let’s go through the very easy steps:
- Olive oil
- Sea Salt (the flaky kind!)
- Wholewheat couscous
Start by washing the kale and remove the thicker stems. Place the kale on a tray, dribble olive oil all over it and sprinkle salt.
Pop the kale in the oven on 200 degrees (gas mark 5-6) and keep an eye on it. When it starts to darken, take it out and mix it around! That’s how everything gets crispy.
Chop up tomatoes and cucumber – I even added a bit of olive oil here!
Cut the halloumi into smaller pieces and fry until golden.
Boil the couscous according to instructions (no pic, soz!)
And there you go! How easy was that?
I used the kale as a base and added tomatoes and cucumber on top, then couscous and lastly halloumi.
