Catching flights and trains – London to Gothenburg

After work yesterday I went straight to Victoria station and Gatwick express. I find the train slightly overpriced but the amount of time I save makes it worth it. As soon as I got to Gatwick airport I checked in as I wasn’t able to do so online, went through the security checks and bought a light dinner at Pret. Boarding! Sweet potato toast!

The other day I came across sweet potato toast on pinterest and you know I just had to try it! I microwaved the potato for a few minutes to soften it up and then cut it into a few 1 cm thick pieces.I toasted them twice on both sides   I fried an egg, added avocado and sprinkled various spices on top.. nom nom Voilaaa! Last nights dinner sent us to sleep

Last night I made a delicious lasagna with quorn and minced beef (mixing it up again!), carrots and the usual tomato sauce and bechamel sauce.. topped it all with mild cheddar and BAM, deliciousness. Last week I decided that regular square lunch boxes are boring and whenever I pinterest meal prep (pinterest addict) I see everyone using boxes with compartments.
